Eggplant Rollatini
Our chefs use thin slices of eggplant which are lightly breaded & fried then filled with our dairy fresh ricotta & mozzarella cheeses & Mrs. Leonard's marinara sauce. The final step is generously sprinkling our freshly grated parmesan cheese all over each one before rolling & baking them to a golden brown.
