Trimmed beef tenderloin, seasoned with fresh chopped garlic, rosemary, cracked black pepper, koshersalt and rubbed with Stew Leonard’s olive oil. Filet is 4-5lbs on average. Let the filet stand for about 20 minutes at room temperature after removing from the refrigerator. Preheat the oven to 350°F and roast the filet for ten minutes and flip. Roast for an additional 10 minutes until a meat thermometer inserted into the thickest portion registers 130° F Rare, 135° F Medium Rare, 140° F Medium, 145°F Medium Well and 150° F Well Done.
